| Tasting Olive Oil. |
Step 1
Pour about 15 ml of olive oil into a tasting glass and cover with the lid. Hold the glass with one hand under the bottom and the other on the top, to warm the olive oil a little bit.
Step 2
Roll the olive oil gently around the inside of the glass, wetting as much as possible of the inner surface.
Remove the glass top and breathe in, smoothly and slowly.
Step 3
Cover the glass again and wait a moment. Then, take a small amount of olive oil into your mouth, and roll it around inside, breathing in some air to experience the sensation at the back of the nose. Then let it trickle into the throat.
Between tasting each olive oil drink a little water and nibble a small piece of apple to clean the palate. It is
not advisable to try more than 3 types of olive oil at any one time, since sensitivity will gradually be lost.
During the test, you will be able to detect the positive and negative attributes of the olive oil, for example:
Positive: fruity, spicy, bitter, etc
Negative: moldy/damp, fermented, rancid and tasting of dregs.
