The project aims to utilise the combined by-products of the olive oil production process, namely pomace, vegetable water and olive leaves, from the viewpoint of reusing them through the achievement of advances such as (i) the systematisation of technical and scientific knowledge on the inherent bioactivity of OHTYR-rich extracts at the industrial level; (ii) the generation of knowledge underpinning the evaluation of technologies in the sense of intensifying a sustainable and viable industrial extraction, fractionation and purification process; and (iii) the study of the impact of applying new products in respect of intestinal inflammatory diseases, diabetes and dermatological problems.
